The Secrets of the Swiss chocolate figurines for Christmas

Our guide for this trip is the chocolate artisan David Pasquiet, winner of the Swiss Chocolate Masters, the most important contest of Swiss chocolate artisans.

How are the Chocolate Figurines for Christmas made?

In order for all of us to better understand the art of the Christmas chocolate figurines, I have visited David in his laboratory in Crans Montana, the place where the magic of Christmas is coming to life. It is right to call this a laboratory because, like all the great artists, the chocolate artisan is guided by passion, imagination, dedication, technical knowledge and a lot, a lot of hard work.  

For example, David is travelling all over the world to find and to choose the best ingredients. Thus, this year he spent over a month in Peru to select the finest cocoa beans for his chocolates. Then, the artisan is the one who thinks and executes the designs of his products. Here comes to light his artistic talent and imagination that must bring to the surface innovative shapes, special and unique tastes, unique combinations of ingredients and colors that steal your eye and your heart to give you the magic of Christmas. 

Last but not least, there is solid technical knowledge that real chocolate artisans use to create their own silicone forms for products, do tens and hundreds of different ingredients tests, with different types of chocolate until they release the perfect product in both exquisite taste and eye-catching appearance. Days and days of work for real chocolate made in Switzerland.

What chocolate figurines are fashionable for Christmas in 2017?

Chocolate Christmas baubles and chocolate potted tree are two of the Christmas chocolate figurines for the Christmas of 2017. The recipes are secret, but you can see in the videos below how they are made.



For the chocolate Christmas baubles, David uses cocoa butter and food colors to create the exquisite design, then fills the shapes with white chocolate to highlight the exterior drawing. Everything goes to the refrigerator for a while to strengthen the white chocolate. After a few minutes the molds are taken out of the fridge and filled with milk chocolate and then put into the fridge again. After the second layer of chocolate has hardened, the molds are removed from the refrigerator and the halves baubles are filled with hazelnuts, milk hazelnuts, almonds, almonds with Christmas spices and almonds with salt flower and caramel. Then the halves are united to create the Christmas chocolate baubles. All the ingredients that are part of the chocolate Christmas baubles are the artisan's creation.

Another unique product is the chocolate Christmas tree that is made from a mic of chocolate to give the exquisite taste and hazelnuts, milk hazelnuts, almonds, almonds with Christmas spices and almonds with salt flower and caramel for Chrsitmas flavour.



It's great to see how a magical bauble made of chocolate for Christmas or a chocolate Christmas tree are made. In my opinion they are the perfect gifts for a happy and magical Christmas.
